Recipe- yummiest Coconut Cream Pie- easy peasy

Hi everyone,

Remember on Gilligan's Island how anne always used to bake Coconut Cream Pie- well someone at work shared her grandma's authentic Bahamas recipe- it's really scrummy and had no problems getting past this little band. Apologies to those who are earnest about their loss, but this one has to be shared. ENABLE, ENABLE!

4 eggs

1/2 cup condensed milk

1 1/2 cups shredded coconut

1/3 cup warm water

1 tbsp vanilla

1 tsp nutmeg

1/4 tsp salt

sweet pie/flan shell or shortcrust shell/ case

Preheat oven to 170 degrees c.

Beat eggs, add 1/2 cup condensed milk, 1/4 tsp salt, 1 tbsp vanilla and 1 tsp nutmeg, beat until well combined.

Fold in the shredded coconut and water.

Pour into unbaked flan/ pastry case and sprinkle with nutmeg

Brush crust with beaten egg. Bake for 35 minutes

Serve with whipped cream or anything else scrummy and appropriate (ice cream, custard, creme fraiche, marscapone et al.).
