Kimchi is a seasoned variety of sauerkraut that shares Lactobacillus bacteria with traditional Sauerkraut, which may be the critical element in preventing Avian Flu. Both Kimchi and traditional Sauerkraut are made by fermenting sliced cabbage, producing a high level of lactic acid. According to an October 2005 BBC report, Kimchi was fed to 13 infected chickens and 11 of them began to recover within a week. South Korean Kimchi consumption is up as a result of this report. http://tinyurl.com/lz5vb Apparently the healthy bacteria, Lactobacillus is what likely saved 11 of the 13 birds that had H5N1, and that were served a diet of Korean Kimchi. Lactobacillus grows in fermented sliced cabbage and salt. This is what Kimchi is, and saurkraut is. Kimchi has some extra spices. Shikimic acid found in nature, is what Tamiflu starts out as, but goes thorough many complex, and dangerous steps to become TamiFlu. My parents, who hail from Europe love sauerkraut, and do sometimes remind me that it does contain some Vitamin C. As far as I can tell, the Vitamin C content of sauerkraut is probably negligible. However, on the other hand, sauerkraut probably has some redeeming qualities as an antiseptic and purger. Eat too much of that stuff, and you're bound to have diarrhea...and maybe wash out other nasty bugs with it. Sauerkraut is pickled in vinegar and that can kill some stuff on its own. For Estonians, sauerkraut soup is sometimes a hangover remedy. Don't ask me about how it works...it's a bit of a mystery. Now, I would like to see what some of these folks were doing or how they were living prior to contracting the bird flu. I bet they weren't eating sauerkraut! Were they living in close contact/proximity with chickens or other fowl? Probably! I really can't see how one family's problem with the bird flu in Sumatra will/can make this a big/world issue for the rest of us, unless there are folks out there who are ready to orchestrate this. I can't force my kids to eat sauerkraut (as much as I like it, from time to time) but they do take their vitamins and minerals and I am sure that they would avoid playing with bird parts, if the occasion ever presented itself to them and I had to ask them to stop. Most of us in the western world do not have contact with live fowl. The only fowl we come across are the dead fowl for sale at the grocery store. I truly can't envision the bird flu becoming a pandemic.
