I had a box (10 #?) that lasted me at least 2 years...

and it was still fine, without refrigeration... I used

it to the last bit... but it would probably be safer

to freeze. :)

I just read this in today's paper, and called the # on

the whites I use -

pasteurized boxed egg whites can be frozen for a year.

This is great news for me, since I go thru so much of

them - and now my 16

yo dd has started using them in her smoothies (for

protein) too.

Are you using the pasteurized boxed egg whites most often in smoothies

or do you like some other recipes?

I am reminded of a recipe I haven't used in awhile, but used to enjoy;

powdered egg whites, water, powdered cocoa, a few drops of stevia or

agave nectar, and an ice cube.

Blend using the handheld immersion blender.

Serve in a wine goblet and eat with a demitasse spoon. Think chocolate

mousse.

It helps during my pms chocolate craving days :)

Of course, for a complete meal, I would have a veggie soup or salad

with it.

Hi M -

I used plain (unseasoned) boxed egg whites for:

- smoothies

- egg/oat pudding (1 cup eggs, 1/3 cut oats, 1/3 cup water, splenda,

vanilla, cinnamon etc, nuked for about 2 minutes)

- 's muffin recipe

- with canned pumpkin for pumpkin pie

- scrambled eggs or omelettes (not nearly as often)

We decided that they are somewhat more expensive, but I love love love

being able to use them in smoothies - for myself and my daughters. And

they're very convenient. We pay $7.50 for 4 boxes, each of which is 2

cups of egg whites.

That's less than a dollar a cup...I payed $12.50 for 3 cups at

Albertsons. Hey, I need to shop around! Where do you get yours,

n? They are very convenient to camp with as well.

My husband does the grocery shopping, and price-comparisons extensively. I

don't know where he gets them - probably BJ's.

price includes shipping). Lasts me forever! :)

I mix it in the blender with frozen fruit, a small

amount of water, powdered stevia, a touch of ground

ginger and cinnamon, and 1/4 Cup of coconut milk (I

follow a more 40/30/30 zone ratio of macronutrients).

Very pleased with their service too.

Matesz's book, " The garden of Eating " has a LOT

of yummy recipes for smoothies using powdered

eggwhites.

My favorite frozen fruits to add are the frozen mango

chunks and the frozen dark sweet cherries... very

yummy!

She also has additional protein based drinks using the

egg white powder... like her mocha frosty... mmmmm....

very tasty! She also has something called protein

coconut spread, which you make and pour over fresh

fruit for a protein/carb portion. And a spread you mix

with nut butter and powdered egg whites and stuff, and

you can spread on apples or bananas for a protein

spread.

I don't get a discount from her about her book, it's

just a very good healthy eating book, emphasizing lean

meats, veggies, and fruit based diet (no grains,

dairy, etc). Lots of awesome ideas for how we eat, a

more " lean out " versus " swell up " type of recipes. She

I just realized that we may not be talking about the same thing. I

use boxed liquid egg whites (unseasoned). Some folks seem to be

talking about powdered egg whites.

Ahh... my eggwhites are the powdered/dried kind (that

are @ $60 for 10 pounds) that come in a box... I

didn't know that liquid eggwhites also come in a box.

Also, i've never tried the liquid egg whites.

I've gotten mine at Costco - they come in a 1 pint six-pack (so 6

cartons total), for about $10, if I can remember the price correctly.

Maybe even $9.

They are the Kirkland (Costco) brand and are " eggbeaters " rip-offs, so

they have the yellow coloring and some mild spices like salt. I would

not use these for sweet baking for that reason. The " spices " in the

ingredients list are VERY mild, so I think it would be OK for smoothies.

I just keep them unopened in the fridge and use them one by one for

omelets, etc.
