I think I'd rather have the bacon. I don't see any harm in a little bit of bacon once in awhile. Eating has to pleasurable and ejoyable too. I have bacon and eggs once in awhile and love that BLT with avocado on sprouted bread. Just try to find the best bacon you can nitrate/nitrite free, organic, natural, etc... 70% carb diet? Seems interesting. Can you give us an example meal plan for a day? Dr. Jan Kwasniewski who developed the Optimal Nutrition diet in Poland, recommends pork highly to his patients and gets excellent results. For a somewhat different angle, according to Chinese medicine in which diet as well as herbs are used as medicine, pork is a tonic for the Kidney/Adrenals and builds the " Yin " and so is very nourishing on that subtle level too. This is especially good for people as they get older and become yin deficient which can lead to many of the diseases associated with aging. I look for pork that has been raised out on pasture. Here is one that ships if you are near http://www.meadowraisedmeats.com/ Ideally I would want pork raised with no grain. I only know of one woman who does this in NH. Pigs are outside and forrage (root), then get whey from her dairy, vegetable scraps, and even the cow Shi* which they love. But no grain. Most pig farmers I ask if they use no grain respond its not possible. Then with bacon I watch out for sugar, preservatives, chemicals, etc. Most smoked bacon is just smoke flavor, not real smoking. I found this the case even at the organic processing plant near me. The women in NH processes right on her farm and smokes on the farm and only uses salt to preservere. This is ideal to me and was the best bacon I ever had.
