I certainly wouldn't heat them under any circumstances either, but theoretically unground flax seeds should last forever at room temperature without oxidizing, since there is no exposure of the germ to air. It's been scientifically verified that seeds can last for thousands of years and still be functional. If they are pre-ground, however, I wouldn't keep them anywhere *but* the freezer! So it is simply reasonable to not regard flax as an ideal source of n-3s. I have seen this word used many times and apparently missed the e-mail that explained what it is. What is pufa? and I assume n-3's means Omega-3's? I appreciate this discussion and am just wanting a better understanding.
