I have a different appetite problem than most-- very early satiety, meaning I'll be hungry if I wait long enough but then feel full after a few bites. (So I'm doing the WD by default, but only the undereating phase!) A few years ago when I was looking into the mechanism for appetite regulation, I came across some posts from Ron Hoggan (co-author of Dangerous Grains) on one of the paleo lists. I don't see this mentioned in the book, but he had said that the duodenum is the site of the earliest gut damage in gluten intolerance, and that's where most of the production of cholecystokinin (CCK) takes place. Since CCK is involved with fat digestion and signalling satiety, if gluten compromises CCK production it would make sense that the satiety signalling would be compromised, leading to overeating. Maybe this is also why difficulty digesting fats is a typical gluten sensitivity issue.
