Sally Fallon, in her book <A HREF= " http://www.acclakelouise.com/acc99/htm/genest2.htm " >Nourishing Traditions</A>, recommends soaking nuts because they have enzyme inhibitors that stress the digestive system and that soaking in a salt and water solution then slow (24 hr) roasting eliminated them. Elaine writes: I do not know what Sally Fallon's background is but every vegetable and fruit that we eat with seeds (like tomatoes) zucchini, and I suspect nuts as well will not sprout and grow unless there is moisture. If that means intestinal digestive enzyme inhibition, OK, but I doubt it. If one likes to do that, I cannot see where it could hurt you but I do not think the reasoning behind it is valid. She seems to be ingoring the fact that most small seeds in fruits and vegetables are either a)discarded or b)undigested. Most people if they are, say, cutting open a bell pepper, for example, will discard the pit. Or most fruit cores are discarded that have bigger seeds. Seeds in most vegetables like zuchinni are too small to chew, and would just pass through the system, since they are surrounded in cellulose. I doubt phytates would be released.
