Well, I was reading a book called " Kitchen Science " (great book!) and came across a possible answer. In this rather non-NT book, it mentions that good marbled steak is usually fed high-caloric density food, meaning grains. If the fat is yellow, it means the cow was fed on that green stuff, grass, and is therefore inferior steak material <LOL!>. Anyway, yellow lard or tallow may mean the same as yellow butter -- beta carotene. I.e. it is probably a good thing ... -- Heidi Quote Link to comment Share on other sites More sharing options...
