Guest guest Posted September 16, 2003 Report Share Posted September 16, 2003 I am gathering some recipes for some simple gluten-free baking. Like chocolate chip cookies, pancakes, easy breads.... Nothing fancy or using a lot of ingredients. I have done some research to find out how to substitute the gluten-free flours for white flour but I am finding a lot of the recipes have dry milk! Can someone help with that? > >Thanks, > >~Del I use the Joy of Cooking -- use sorghum flour instead of wheat flour, and add a little xanthan gum. Those recipes don't call for dried milk generally.
