Guest guest
My observation is that freezing fruit somehow cuts the sweetness - no getting away from that. What I do is quick freeze strawberries, peach slices, blueberries and then use them in Smoothies made from kefir and sweetened with stevia. The tartness of kefir or yogurt brings out the good flavor of the fruit. I layer the fruit in the bottom, and put it in the freezer. I put silicon or plastic mats (baggies work) on the bottom, so the berries don't stick. Then when they are frozen, I pull up on the mat, the berries come off, and I stick them into bags. Frozen fruit will always " mush " when you thaw it, but for smoothies etc. that is ok. -- Heidi
