Today is my husband's birthday and I wanted to do something special for him, so I started his day with these quiche like muffins. Spicy Muffins Mix Together: 2 medium whole eggs, 4 egg whites, 1/2 cup corn muffin mix, 1/4 cup skim milk, 1/2 cup spicy salsa, 1 cup spinach, 1/4 cup shredded mozzarella, 1/2 teaspoon salt. Bake at 350 degree for 30 minutes. Makes 6 muffins (serving - 2). I didn't have enough eggs to do as the recipe stated, so I used 4 whole eggs instead. Also, I used fresh spinach.
