Guest guest Posted September 10, 2003 Report Share Posted September 10, 2003 MISCONCEPTIONS OFTHE TERMS ORGANIC VS GRASS FED VS 100% GRASS FED (NO GRAIN) ORGANIC VALLEY OR ANY OF THE COMMERCIAL ORGANIC BUTTERS WILL HAVE A FATTY ACID COMPLEX SIMILAR TO STANDARD BUTTERS FOUND IN ANY SUPERMARKET. THE FATTY ACID COMPLEX IS STRICTLY A FUNCTION OF THE RUMINANTS DIGESTIVE FUNCTION BASED ON THE RUMEN pH. THE pH OF THE RUMEN IS A RESULT OF THE DIET. EVEN A LB OF GRAIN WILL CHANGE THE pH OF THE RUMEN HENCE THE FATTY ACID COMPLEX. 90 + % OF ALL THE CREAM USED BY EVEN THE ORGANIC BUTTER MANUFACTURES WILL BE DERIVED FROM COWS THAT HAVE SOME GRAIN IN THEIR DIET. THE COLOR OF BUTTER CAN BE MISLEADING BECAUSE THE BUTTER MANUFACTURE CAN ADD COLOR WITHOUT NOTING IT ON THE PACKAGE. THIS IS MY UNDERSTANDING PASSED TO ME BY OTHERS IN THE INDUSTRY.
