The LA Times has a graph on an article though that is pretty interesting (you have to register though, to get it): http://www.latimes.com/features/health/la-he-wholegrains29jul29,1,6167591.story In that scale grain consumption went from 140 to 200 lb per person per year, between 1972 and 1997. On the wheat site: http://www.wheatfoods.org/grain_info/graincon.html Wheat consumption has gone from 114 lbs to 150 lbs in the same timeframe. (and the wheat folks would like it to be a lot higher, according to their website). So the last 20 years has both a huge grain increase and likely, a huge carb increase -- and I'd guess a lower fruit/vegie/meat consumption (or maybe the same and that is why we are so fat. -- Heidi Quote Link to comment Share on other sites More sharing options...
