Dave: this MIGHT be a good phone # for ordering PIIMA? 619-574-7763.

Or, use the address I posted. No web site that I know of, although if

you do a search for the Weston Price foundation, you should find links

and info on PIIMA and whey, etc.

Terri: instructions come with the culture and one would have to be an

utter dolt (which I'm sure you are not) to mess up the process.

Michele: re your 2 reasons for possibly avoiding dairy products: 1) the

fat content and 2) should we consume dairy at all. There has been much

disinformation spread about the " dangers " of fat in the diet. If we

filter out the crap coming from the FDA and other fed agencies and

commercial interests about what is the proper diet and start looking at

non-biased sources like the Weston Price Foundation and others that

document the very important role that high quality fats play in our

diets, we see that it is vital to have at least 30% fats in our diet.

Cultured dairy products are one of the best sources. Also raw or lightly

cooked meats.

It's my opinion that dairy products are necessary for most, if not all

Caucasians. Many generations have been consuming them. Only since the

processing of milk, cheese, etc started early in this century have people

developed intolerances to them. Pasteurization and homogenization have

ruined an important food source. Many people with " allergies " to dairy

products find that they vanish when they consume raw dairy. Culturing can

overcome the processing damage to a significant extent. I use

pasteurized, organic milk and have benefitted. I will use raw if and

when I can find it.
