Guest guest Posted August 10, 2003 Report Share Posted August 10, 2003 well, you should (of course) form your own opinion but i would not and do not use tofu anymore. tofu is definitely not fermented and soy is accused of causing lots of problems, esp. for the thyroid gland. there are also problems with infants consuming soy formula and early maturation. after years of eating tofu, i now don't touch the stuff. heather maryjsteng <mary@...> wrote: I read something in N. The book I'm finding my info in is called " The Book of Tofu " food for mankind by Shurtleef and Akiko Aoyagi. I can give a quote also tell you this--the book is written based on the authors personal experience travelling in Japan and spending time personally visiting Japans oldest and most reknown tofu restaurants and also travelling abuot the country learning from various tofu masters and seeking information on the history of tofu and learning to make a large variety of types of tofu. they also sought out tofu makers in rural areas, backpacking to remote areas where they found --grandmothers who had traditional family tofu recipes .. etc. Over a 3 yr period the authors prepared and enjoyed more than 1200 tofu dishes and include about 500 in this book--including fermented recipes. Here is a quote: " Since earliest times, the people of East Asia have honoured tofu in poem and proverb. Known as " meat of the fields " and " meat without a bone " , tofu has provided them with abundant sustenance. " Here are a few more: " Though unassertive, it is indispensabel in teh diet of more than 900 million people. " the book also states that there are over 38,000 tofu shops in Japan. so- I dont know if the authors are reliable in thier claims but they spent 3 years in Japan and several years back here in America researching and experimenting with tofu--so I guess they probably know something about it. Well, probably it is great if you have acquired the taste for it. But it is very strong, like Limberger cheese. But maybe your recipe is more mild. I gave up on tofu -- I was forcing myself to eat it because it was " healthy " but I never could quite get into it. Somehow I just like beefsteak better! So hearing it isn't all that good for you is fine by me. I don't think it is harmful in reasonable amounts though, and you are right, the Asians seem to do ok with it.
