Has anyone fermenting vegetables other than Kimchi vegs and Cabbage?

Has anyone thown any greens in their fermented vegs and what kind of greens

did you use? I would like to get more variety but am unsure what would make

a good combination of veggies and spices.

I tried doing the ginger carrots with very little ginger because I don't like

the taste

and they didn't ferment well. they are still hard and sweet. What spices are

good

in place of ginger to help fermentation?
