Basically you fill a container with fruit juice, diluted fruit juice, or sugar

water. Add some sliced ginger if you want. Then add a couple of washed kefir

grains, close up the jar, and let it set for 2 days.

Now, the one thing is: if you use a regular glass jar, it can explode. So, I

confess, I do this in a Nalgene bottle, or do it in a French canning jar (wire

top) then strain the beer and put it into ez-cap bottles (which are pretty

explode-proof -- they are made for bottling fizzy beer). The kefir-beer in

ez-cap bottles will keep for a week or two in the fridge. After that it is still

drinkable, but it gets a little bitter sometimes.

Anyway, I'll do a writup on it ... it really takes pictures to get it right. But

other than exploding jars, it's really easy. Drop kefir grains in fruit juice.

You can reuse the grains for months (I don't know how long they last, these I've

had since the beginning) in juice, but you can't use them again for milk, so use

" extras " .

Now, if you don't have kefir yet -- get some! It's good stuff. And if you don't

You ask someone to send you some. The

best bet is the kefir-making group -- I can

send you some of mine, but mine aren't really

kefir. You should read the PDF first so you

know the difference, and it has the address

of Dom's website (or search on " kefir Dom " )

which gives the whole story.

Someone else on this group might have

" regular " kefir to share too.
