This reminded me of a trouble I'm having. I'm finding that even using the

straw to taste it with, I'm disturbing the SCOBY, and then the brew takes

longer. I'm not sure what to do, or why my SCOBYs leap up at the slightest

provocation. heh... kidding... but when I put in the straw, the other side

of the SCOBY lifts up and separates from the vessel. I'm trying to be careful.
