Guest guest Posted March 14, 2006 Report Share Posted March 14, 2006 I started a Gluten and Casein free diet, because that was all the information available to me at the time and , But now almost 2 years since everything started, I have to say I did some modifications to the diet mainly base on my continue research for the best interest of my son healing process and now I believed all the traditional diets for autism intervention are incomplete, I believe the exceptional research made by Sally Fallon, PhD in her book " Nourishing Traditions " makes the most sense and has prove to me to have faster results, I recommend everyone to read this book will make your life a lot easer than following extreme diets, in my opinion sometimes unnecessary like It was for my son and I, Thanks to God and Dr. Cowden we found out, gluten was not the problem, in my case the problem was gliadin (A glycoprotein (a carbohydrate plus a protein) within gluten. Gliadin is found in wheat and some other grains, including oats, rye, barley, and millet.) soon I learned that eating sprout whole grains makes a big difference everything turn around, also I fill my diet with good fats like raw butter and good bacteria from coconut kefir and raw milk (from FREE RANGE ORGANIC GRASS FEED ONLY COWS) kefir I encourage everyone to learn about fermentation and sprouting grains, now my life has flavor again and I can say: my son and I enjoy our food! Just like God meant things to be. Please, please, please give yourself and your kids the chance to try a simple way of eating that can turn their gut issues around faster than other things, this book will tell you how to give natural enzymes, good bacteria and more in simple natural steps, this approach has been very beneficial for me and my family, and my son that continues to improve his overall health. I think my son was a picky eater because the Organic food Ive been try to feed him, was not prepare properly for his digestion, so his body knew something was wrong and avoiding eating them was the best thing for them to do. For example: I try to cook beans for him here in USA and he refused to eat them, but when I went to Mexico or Costa Rica he will did eat them with enjoyment and those even have onions and green bell peppers and more stuff that I can not even try to give to him here because he will spit it out , so I started trying to figure how to make him eat everything again and find out in those countries as well my country of origin, they soak the grains 1 or 2 days in advance prior to cook them, before I thought my mom did it because made them easy to cook, but now I know there is an actually science behind it and it is a very important thing " SOAKING GRAINS AND SEEDS BEFORE EATING " especially for our kids if we want them to get better. I think is not about how special our " DIETS " are but the most important it is the quality of the food we eat and the way how it is prepare in order to have a good digestion and overall health. Just like Sally Fallon explains in her book page 452 about " Whole grains " Here is a little piece from that book that will help me explain my point: " This is not the place to speculate on that mysterious instructive spirit that taught our ancestors to soak and ferment their grains before eating them; the important thing to realize is that these practices accord very well with what modern science has discover about grains. ALL GRAINS CONTEIN PHYTIC ACID (an organic acid in which phosphorus is bound).Untreated phytic acid can combine with Calcium, Magnesium, Copper, Iron and specially ZINC in the intestinal track! And BLOCK THEIR ABSORTION! " NO WONDER WHY OUR KIDS ARE NOT GETTING BETTER AFTER SPENDING a LOT OF MONEY IN MINERALS AND VITAMINS AND SUPLEMENTS, THE KEY IS THEY HAVE MALABSORTION(OF COURSE WE KNEW ABOUT IT), BUT WHAT WE HAVE NOT REALIZE IS THAT WE ARE CAUSING THAT! WE WERE NOT COOPERATING TO THE HEALING PROCESS ALL THOSE GF/CF OR SCD OR the other DIETS ARE NOT COMPLETE my son got a chance to get better because the fact he was getting proper food overseas, Thanks TO GOD because I had no clue until now, please read this book Is a must HAVE to help our kids and yourself getting out of all those extreme diets, God did not want us to live like this he meant for us to be happy, with simple changes following the rules our lives can be a lot easier, and our kids will enjoy delicious healthy food, not weird gluten free cookies that taste horrible! I think Gluten or gliadin or phytic acid is not the problem the problem is how we process the food! God made the grains with certain proteins and components for a reason we just have to follow the rules to eat them, like a banana you do not eat it with the peal, you peal the banana to eat it , so the grains needs to be sprout it, Give it a try the allergies disappear if the guts heal and the guts wont heal eating food that are causing irritation to the gastro- intestinal track. Also God said in the bible that wheat was giving by him for us to eat, he will never harm us, it is our mistake what is causing our problems, and he clearly explains we should sprout the grains to eat. The modern misguided practice of consuming large amounts of unprocessed bran often improves colon transit time at first BUT MAY LEAD TO IRRITABLE BOWELL SYNDROM and in long term many other adverse effects " WE HAVE BEEN TRYING TO GIVE OUR KIDS ENZYMES WELL WE ARE NOT DOING A GOOD JOB, HERE IS WHY: " Soaking allows enzymes lactobacilli and other helpful organism to break down and neutralize phytic acid. As little as seven hours soaking in warm acidulated water will neutralize a large portion of phytic acid in grains. The simple practice of soaking cracked cereals grains overnight will vastly improved their nutrition benefits. Soaking in warm water also neutralizes enzyme inhibitors, present in all seeds and encourages the production of numerous beneficial enzymes. The action of these enzymes also increases the amount of many vitamins, ESPECIALLY VITAMIN B " ... As you can read give the kids enzymes easer that awful capsules and supplements can be done naturally with the right food, This was the key for my son recuperation I gave him everything as natural as possible in fact I never gave him enzymes supplement and his guts heal faster than anyone else I have seen in the spectrum. Living in a small town in the U.K., with little access to green foods though, i wonder where i am going to be able to buy the products she suggests.
