Best article about the kombucha fermentation process?

Hi,

I keep on forgetting what the yeast produces, what the bacteria

produces. which comes first, which comes later.

What is the best article on the web or previous post in this forum to

read about the process?

I think I read one more " scientific " sounding article somewhere on the

internet but I couldn't find it just now. I think that is probably what

I'm after but it was a long time ago when I skimmed through it and I

can't remember now what it was really all about. But I believe it was

describing the fermenting process in some detail.
