If I have to pick one thing, I have to say that fat was the big thing for me in 2007. I have been gradually adding more NT principles and foods to my diet over the past several years, but I just wasn't grasping the whole fat thing. Then came the gallbladder troubles. I ended up going very lowfat until the inflammation subsided. Since then I have gradually increased my saturated fat consumption while continuing to avoid the polyunsatured fats. Now I amaze people when I shamelessly eat liberal amounts of butter, coconut oil, fatty meats, and eggs. I feel better than I have ever felt in my life. I also take at least two teaspoons of high vitamin cod liver oil daily. My fourteen month old daughter especially loves our daily dose of clo. She opens her mouth wide and then slurps it off the spoon greedily. For 2008 I would like to increase my consumption of fermented foods and drinks, especially kombucha. Thank you for the inspiration, Will! I also want to further decrease my starches and sugars. I notice that I already eat fewer starches and sugars than most of my friends and family. I still feel that for my body at this time in my life, even a little sugar and starch may be too much. I am very interested in hearing about peoples' experiences with the GAPS diet. Guest guest Posted December 29, 2007 Report Share Posted December 29, 2007 I am new to this list, and unlike most do not eat meat in my diet, although my husband and I enjoy plenty of fresh - local when possible - vegetables, eggs, raw milk, grains, coconut oil and butter. The biggest change I made to my diet this year was a double dose of freshly pressed juice every morning - one green juice containing chard, cress, arugula, cabbage and apple, and one carrot juice. My skin is great, my hair is growing like crazy, and I feel clean inside. Next year I resolve to add more raw vegetables to our daily diet of whole grains and dairy.
