Last I heard, Great Harvest Bakery (there are several around town) will sell

freshly

ground organic wheat flour. Just call them ahead of time to see which day they

are

grinding and to reserve a bag for you. You can then store it in the fridge or

freezer.

That way you don't have to buy your own grain mill yet.

I would caution you to continue to avoid the gluten, even sprouted or

sourdough, for the time being. Experiment with the cultured dairy if you

want first, but don't complicate the picture by doing both at the same time.

How long have you be gluten free and dairy free? You said you are only

50% better, maybe your system needs more time to heal. If you want baked

goods, look into using coconut flour, which you can order online from

Wilderness Family Naturals. It will satisfy the desire for baked goods

without add any grains to your diet. It is also a very healing food. There

are also plenty of gluten free grains that you can ferment following

traditional food techniques, for example injera bread is made from fermented

teff flour and dosas are made from fermented rice and lentil flours.

Gluten, even in the form of sprouted or sourdough breads, can be very

detrimental to healing.

I will be happy to share recipes for gluten free stuff if you want, either

on or off list.

thank you for the advice. It is a good idea to do one thing at a time.

I have been off gluten since last may. I had a celiac test that was

negative. I tested with a Lab called Enterolab and found that I do not

carry the celiac genes but I do show antibodies and genes for gluten

intolerance. So I am still hoping that preparing spelt or similar grain

the proper way would make all the difference. But I will wait until I

am more healed.

I believe even the gluten free gourmet has a sour dough recipe using

bean and sorgum flours. I just don't know if its soaked long enough.

Yes, I would appreciate any recipes. I'm dying for some bread that is

similar to wheat. Rice and tapioca don't cut it! bleh.

Therese, thank you for the idea about Great Harvest bakery. I do want

to make the switch to making bread the proper way for my family too and

they are not gluten free so that is an excellent way to try it!
