One of my very favorite cottage cheese meals is mandarin oranges, pineapple chunks, and mashed macadamia nuts, sweetened with splenda. I use 1 cup of non-fat cottage cheese, 1/2 cup each of canned mandarin oranges and canned pineapple in its own juice (drained and thoroughly rinsed), and 3-4 crushed macadamia nuts. It works out to about 329 cals, 31g pro, 33g carbs, and 8g healthy nut fat. You should try it once. Any nut you can crush would work though. Or you can skip the nuts altogether. Put whatever amount of cottage cheese I am eating on top and sprinkle with cinnamon and sometimes equal or splenda. Microwave it all for about 30-45 secs. It is so yummy and filling . I tried this last night for one of my evening meals and it was absolutely delicious. You are right it is very filling as I could hardly finish my portion.
