Good morning, Juls!

Glad to see some more protein and calories in your menu. It'll probably take

some getting used to after lo-carbing it for so long.

My step-father has been dealing with some health issues over the past few years,

the most serious of which was having his prostate removed. Then he has sleep

apnia, for which he wears an apparatus at night. His dr. told him that losing

weight would help his sleep apnia, so he tried Atkins for awhile. It really

helped him lose weight, and he had no problem doing it, but his cholesterol was

always sky high. Recently, he's had some increased PSA levels (prostate cancer

indicator) so he and my mother are involved in a study at UMASS Medical that

focuses on a Vegetarian diet, meditation, etc... to reduce stress. My mom said

that, with all the Morningstar farm type substitutes out there, he really hasn't

noticed much a difference in the taste of his daily diet. He's losing weight,

but most importantly, his cholesterol dropped about 80 points in a month. So

although Atkins is an effective weight loss tool, just from the experiences my

step-father has had, I don't think it's very healthy for the long term.

OK - off my soap box. I had a decent weekend. Took yesterday off from

exercising. Saturday turned into my free day for eating - it just naturally has

to be Saturday because that's the day our family relaxes, nobody cooks, etc...

Sunday I really wasn't very hungry all day. I only had 3 or 4 meals all day,

which hopefully helped make up for the 2 cookies I had last night. It has

already started - the holiday baking goodies from neighbors. The cookies were

from my next door neighbor, and they were simply divine. I need to return the

" favor " (snicker...).

I'm due for an UBWO today, but we chose to sleep in this morning, so I need to

fit it in later today sometime. There's finally snow on the ground in Green

Bay, so my daughter and I spent some time outside this morning, shovelling heavy

wet snow off the driveway. That actually kind of pooped me out. I had my

mid-morning snack right after, ate some leftover chicken that I made yesterday

that nobody but me liked - I have such a picky family! My carb wasn't exactly

authorized - tostitos and salsa. I need to just move on and be good the rest of

the day.

I'm pretty tired for some reason, so I'm going to make some tea or something to

perk me up.

Week 2~~~ DAY 8 of 84~~~ BFL~~~~ 12/6/04

Good morning everyone!!! Hope everyone is waking up to a wonderful

Monday.

I am going to be headed to the gym shortly for LBWO... I am going to

be doing the donkey squats as my 2nd quads exercise... the leg

extensions seem to be hurting my knees a little and don't want to

screw up my knees....

Food today is:

Breakfast: 2 Kim's Flaxmeal Cinnamon Muffins, 1/2 c. cottage cheese,

and 1 oz pork rinds

Snack: 3 stalks celery, 2tbsp peanut butter, 1/2 c. Jello, 3 ozs of

Turkey

Lunch: 4 ounces Venison Burger, 1 oz. cheese, 1.5 cups green beans

Dinner: 4 ounce Venison Round Steak, 1 cup baked zucchini

Snack: 1/2 banana

Food numbers are:

Calories: 1309

Fat: 64 grams (45%)

Carbs: 45 (9%)

Protein: 145 (46%)

Does the protein amount seem okay? Calories are a little higher

today so I think that is good....

Tonight should be a nice relaxing evening at home which I am loving

the thought about it.... Seems we have been busy lately....

DH's goes for his 2nd interview tomorrow morning.... his car decided

to break down so it is at the shop so we are down to one car so he

will be taking me to work and picking me up and doing all the

errands during the day...

Cardio yesterday was great... At level 9 I was at incline 4, speed

5.2 and at level 10 I was at incline 7, speed 6.0..... It felt so

wonderful.... I was totally wiped out after it... I took an extra 1

minute cool down so total time was 21 minutes... don't think that

will hurt too much.... I then headed upstairs and did Abs Boot

Camp.... only did 2 sets.... This coming week though I will be doing

all three sets with the active rest between set one and set two and

then no rests for the rest of it.... I can somewhat feels sore abs

this morning....

Oh BTW.... M-I-L gave me the money to get DH a session with the

personal trainer so I will figure out this week what 2 $25 sessions

will get him.... I really think he is going to enjoy it....

Eating was a little rough yesterday but I didn't cheat but did eat a

little too much... Of course it was all low carb... more fruit than

I usually eat but I really do not feel that I ever got fat from

eating fruit... LOL.... it was just that the natural sugar in the

fruit set off cravings and THAT is what caused the cravings for

everything else...

Let's see.... do I have anything else to gab about? Hmmmmm.... nope

I think that is it....

Could you post your receipe for your flaxseed cin. muffins. I

apologize if I missed it previously, sounds yummy!

Here is the recipe... remember I am an Atkins person so the nutritional values

aren't the best for BFL:

KIM'S FLAXMEAL CINNAMON MUFFINS

3 eggs

1/4 cup sugar free syrup, such as Da Vinci (I used brown sugar flavored)

2 tablespoons water

1 tablespoon vanilla

1 cup flax meal

1/2 teaspoon baking soda

1/2 teaspoon baking powder

2 tablespoons cinnamon (the amount is correct)

In a medium bowl, beat the eggs with a fork. With a fork or spoon, beat in oil,

syrup, water and vanilla. In small bowl, combine remaining dry ingredients, then

stir into egg mixture. Let stand 5 minutes. Spoon into 12 well-greased muffin

cups (without papers). Bake at 350º 12-15 minutes, or until they are lightly

browned and seem set to the touch. Remove from tin at once to cooling rack.

Store in refrigerator.

Makes 12 muffins

Can be frozen

Per Serving: 85 Calories; 7g Fat; 4g Protein; 4g Carbohydrate; 3g Dietary Fiber;

1g Net Carbs

These taste remarkably like bran muffins, but with a lighter texture. Mine had

pointy peaks on them, so they look a little funny, but they taste fine. They

sliced nicely even when still hot from the oven. They freeze quite well. I

thawed one and reheated it very briefly in the microwave and it was perhaps a

bit spongier, but still good.
