There are some great recipes. Also if you go to the groups main page, Maggie (I think) posted a few egg/hash brown casserole dishes you can make. Also remember you can eat anything for breakfast. One of my favorites is a White Turkey Chili (posted in the recipes files here under BFL dinners) for breakfast. And another great source of recipes is Maggie again <G>. Guest guest Posted October 13, 2004 Report Share Posted October 13, 2004 I just had it yet again..the eggwhite pancakes...and I am telling ya- --you would never guess there is cottage cheese in them....YUMMY! (and I got this recipe from: http://www.mrsbishwitskitchen.com/forums/default.asp?CAT_ID=4 ~~Egg White Pancakes~~ Makes 1 serving 4 egg whites 1/3 c. dry oatmeal 1/3 c. fat free or low fat cottage cheese 1 tsp. vanila extract 1/2 tsp. cinnamon 1/4 tsp. lemon juice Blend all together in a blender until smooth. Drop 1/2 cupfuls of batter onto a griddle or skillet that was sprayed with butter flavored cooking spray. Cook over med. heat until dry appearance around edges and bubbles start to form in batter. Flip the pancake over and cook the other side until golden. Continue with the rest of the batter. Spray each pancake with a squirt or two of " I Can't Believe It's Not Butter " spray and serve with sugar free syrup. Makes 1 serving. Nutritional stats per serving are; Calories:212 Proteins:25g. The recipes are all 200-270 calories on average, with 20-25 g carb and protein and around 6 g of fat or less. Reduce the fat ingredient by half if you want a perfect BFL ratio. I've been using them for almost all of my cooked meals even though I own EFL and the Stella's Kitchen cookbooks. I like knowing that anything I pick from the file is a perfect BFL meal without having to stress over portion sizes or trying to figure out how to make yet another 3 oz chicken breast palatable. Besides, there's a recipe in there for a yummy cinnamon raisin muffin that's the size of a Big Mac! That alone makes it worthwhile. (Lots of other muffin combos in there, too.)
