Good excuse to make some yummy roasted chicken soup!! Snuggled in my blanky with my two pups - I can't wait to get home!! The soup - for those interested! (It tastes like you have been simmering it all day - when in reality it takes about 20 minutes, if you have precooked the barley, and about an hour if you have not). Saute chicken in a pan with Pam; measure / weigh your portion (I used 4 oz for me, 6 oz for my hubby). Place in a good soup bowl Take some fat free / low sodium chicken broth put in a pan on low, add in celery, carrots - simmer about 20 minutes on low. We added in a really good seasoning - I can't remember the name - but it was an all purpose seasoning ( something or other - a guy's name) Cook pearled barley - or get out the cooked stuff ya go. Add 1 c. barley into the bowl with the chicken, and then pour the broth and veggies over it... DELICIOUS!! and filling because of the barley!! Have a great weekend everyone! I went to a wedding in Portsmouth in January and stayed at a beautiful redone resort called Wentworth by the Sea. It snowed the night before the wedding just enough to coat the trees and then warmed up to about 40 the night of the wedding - perfect. I love New England. Is that near you? I had been living in Manchester - about 30 minutes from Portsmouth. Portsmouth is my favorite place in NH. Wentworth by the Sea is beautiful. Nice golf course as well. And we walked around town some the afternoon before - in the gently falling snow. It reminded me so much of growing up in New England. And Wentworth by the Sea is so romantic - maybe you and yr hubby could make a romantic overnight there a reward for to shoot for? When you reach your end goals? Just an idea - the place oozes romance I think.
