While the following recipe calls for nutmeg, I'd imagine you can omit it w/o anyone shedding a tear... This is my absolute, hands-down FAVORITE holiday recipe (my mom started making it for Thanksgiving sometime back when I was in high school and it's been a staple on the holiday table ever since). Good luck in finalizing your sweet potato dish ( & even if you don't use this one, you've GOT to make it sometime soon...your tongue will be wishing for more taste buds just to savor the experience). Merry Christmas! Becca *Sweet Potatoes Au Gratin* 2 lg yams – peel & slice ¼†1 egg 2 C whipping cream ¾ tsp sea salt 1/8 tsp nutmeg 3 T (or more) parmesan pinch of pepper Preheat oven to 375°. Place potatoes in 8†sq. baking dish. In bowl, beat egg. Add & mix well: cream, salt, nutmeg, & pepper. Pour over potatoes. Sprinkle with parmesan. Bake uncovered 40-45 minutes. It's so simple and sweet without any added sugar! Take 1 1/2 pounds of sweet potatoes and roast them until they're very tender. Let them cool just enough so that you can peel them. Meanwhile, into a small saucepan, put just shy of 3/4 cup heavy cream, about 1/3 of a vanilla bean (scrape seeds out into the cream) and a little orange and/or lemon zest (optional). Bring to a summer over medium heat and cook gently for about 5 minutes. Fish out the vanilla bean and mash the potatoes with the vanilla cream and 2 tablespoons of butter. That's it!
