I highly recommend checking out Dr. O'Brien's site on Gluten Intolerance and Celiac. Also, the Weston Price Foundation and NTA (nutritional therapist association) sites. NTA is having their annual convention this weekend in Vancouver, WA. Excellent speakers such as Janet Lang D.C., etc.

There is real science behind the notion that prevalence of grains in our diet are contributing to an increase of chronic inflammatory conditions in our population. Processed food is basically Gluten, Corn, Soy, and Dairy. These "base materials" that the food giants make all this crap out of is all government subsidized and cheap. I have seen absolute miracles occur in patients when we remove one or all of these foods from their diet. It is a no brainer in my opinion that these foods are contributing to the erosion of our health. Most of the population is addicted to these substances and brainwashed by sixty years of media droning. One of our biggest challenges as doctors is to really understand the biochemistry of inflammation and the role these substances play so we can really own it and present it to our patients. Am I emotional about this information? I prefer to call it impassioned.
