The problem with a low carb diet - especially when it becomes the almost no carb diet, as many people seem to want to do - is the simple fact that YOUR BODY NEEDS CARBS. Carbs provide basic energy. Carbs also assist your body in properly digesting protein. Inadequate carbohydrate intake can lead to ketosis and even brain damage. What we *should* try to cut back on is highly processed carbs, especially things like white bread, pasta, etc. Focus on whole grains, beans, fruit - healthy carbs. Use breads and pastas made from whole grain flour. There are so many options out there!
