Cheddar shot through with blue veins like a good Stilton or Cabrales, all creamy and crumbly and super rich. Oh, I also got some of the ginger/mango stilton I love. I guess I prefer that " gamey " , " goaty " taste over the taste of mold! I do love Brie, though; it's my favorite cheese, and thats a little moldy, but not as strong as blues. " and my eyes widened in recognition -- it smelled/tasted EXACTLY like the goat hair tincture I use in my perfume Pan!!! I was really shocked. It's been years since I had goat cheese, so I had no memory of the taste/smell. Pure Frontrunner (he's the goat that contributed the hair.) It was just really amazing, and it gave me a good laugh. I am working on one which has a few notes including White Thyme, Rosewood, Green Mandarin and Pink Grapefruit........for a client I have been fiddling around with it now for quite a few weeks..... one time too Thymy another too sweet..... just a few days ago I introduced a touch more Rosewood and Bam the separation, clean sharpness was there...... boy that is such a high when that happens ............pure alchemy.
