Guest guest Posted May 15, 2005 Report Share Posted May 15, 2005 And if you live in a moldish place you probably should do just that (to prevent mold forming) I grew up seeing a few kombucha jars covered with cheese cloth around my mom's kitchen. So when I started making my own I didn't even think of covering with anything else. Untill a few months ago I actually covered a jar with its original plastic lid. Guess what? It brew perfect kombucha and produced a great baby, and again and again... all while closed Also, speaking of rules - you CAN use metal with kombucha. Again, for the sake of experiment I am brewing 5th generation of babies in a metal can. It is just fine. I sent kombucha babies to hundreds of people and always included in my istructions 'no metal' and 'cloth or paper top rules'.
