Storing sprouts when it's too hot in the kitchen.

Now that we are experiencing yet another heat wave in Brooklyn, NY, I have a

question. My sprouts are growing like mad in this heat. I rinse and drain them

MANY times a day and they are doing just fine.

My concern is when I retire for the night. I put on my air conditioning, and I

bring all the stacked trays and put them on a table in my bedroom. So far, so

good.

Because I know that if I left them in my 80 degree (or maybe higher) kitchen,

well, I have no idea what might happen and I don't want to find out.

Here's my question. And forgive me if it's totally stupid but I have to ask

this.

Instead of carrying all the trays and putting them in my bedroom when I am

sleeping, can't I just take the trays (I have about 5) so I would make two

groups, and can't I put them in my refrigerator overnight?

The next morning, I would simply take out the trays, and rinse and drain, and go

about my business.

I never thought of having to do this but this summer is a killer.

If anyone has ever done this, I'd like to hear about your experience.
