Dear Ones,

The socby itself is not Mother of Vinegar. That is another type of

culture that makes True Vinegar, such as Apple Cider Vinegar.

We say that KT turns into vinegar after seenteen days, but that a KT

type of vinegar, not the one that MOV makes..

Sometimes people use unpasteurized vinegar, such as Apple Cider that has

not been boiled, as starter for KT and accidentally make a differnet

culture called MOV (Mother of Vinegar).. Apparently, it looks similar to

a scoby, but it doesn't make KT.

Some think they are making Kombucha Tea while they are actually making

vinegar. No wonder their so-called KT always tastes like vinegar.

If your KT doesn't taste somewaht like apple cider that is both sweet

and tart, it may not be Kombucha Tea at all.

O . Woe. I think mine is KT. How do we know for sure?
