Guest guest Posted March 17, 2005 Report Posted March 17, 2005 Finding mold on your SCOBY can be frustrating. Depending on the climate that you live in(wet and damp) it may be hard to keep molds at bay. A couple of things one may try: 1. Keep the fermenting kombucha/brewing jars isolated from the rest of the house. A large fish tank w/ cover works well for this or you could build a special box. This will help keep mold " fallout " down. You could also try using a ion/air filtration system in the room/area where to kombucha is kept, this will clean airborn molds looking to land on your SCOBYS. 2. always keep the brewing tea and cultures covered. Never leave the jars uncovered for more than 30 seconds, if you live in a high mold region you may also have to double up your cloth covering. 3. Keep your dry green or black tea in sealed jars, too. This can be a source of mold, especially if it is organic tea (no preservatives or fungicides as normal teas have) 4. Wipe down your working area with a disinfectant of some type. This step you may or may not wish to do. Care must be taken not to contaminate the kombucha, say with disinfectant on your hands. I hope that this information will help.
