As far as medicinal value they remain only theories and the theories are often contradictions. On how long is proper is a debate as old as which end of the egg should one crack open. All teas (Camellia Sinensis) are not equal. for instance " white tea " a sub-category of green tea. Tea being classified in 3 categories (green, oolong, black) Shu-Mee a white tea comprised of stems, pieces and leaves is low in caffeine and will quickly become bitter if seeped too long. While Silver Needle, a white tea comprised of very young tender leaves is higher in caffeine and may be seeped quite a long time without becoming bitter. Traditionally Japanese use powdered teas with a very quick seep time while Chinese use the whole leaf and actually leave the tea in the cup and simply add fresh hot water throughout the day. Then of course the British add milk to theirs, the Tibetans add butter, Americans, naturally prefer instant. Brew to your taste cause it dose not't matter to the kombucha. Or select a tea based upon perceived medicinal value (refer to Japanese or French studies) and tweak your kombucha towards that goal.
