continuous fermentation

hello all...back again after a few months. i was wondering if Bev or someone

could explain the continuous fermentation process again. i have a water crock

with a spicket but what should i check for to make sure it's safe for brewing?

Hi EveryOne,

I love the Continuous Fermentation method! Need to find a 3-5 gallon glass

container with a plastic or wooden spigot to do it again.......

Hi

Can Kombucha be brewed in containers made of clay? Where I am from, Haiti,

theymake large containers made of clay to conserve/store water. They are called

there a " Canari " .. They vary in size from 6 liters to 20... It would be easy

to mount a spigot in such a vessel...

Has anyone brewed KT in a clay vessel? Pros? Cons?

Hi Franz and EveryOne,

I used a clay vessel that a friend of mine who is a potter made for me

to use with the Continuous Fermentation method, wooden spigot and

all. It is beautiful but it didn't work out for Kombucha. Some time,

possibly around a year after I started using it, little droplets of

Kombucha tea began to appear on the outside of the crock. At first I

thought I might have spilled some kombucha but it turned out that the

drops were seeping through tiny holes in the clay, which was also

glazed on both the inside and outside....nothing was stopping the KT

and since it could also be leaching from the outside glaze into the

inner part of the crock I set the beautiful crock aside and went back

to using glass for fermenting KT. After that experience, I will only

use glass for fermenting KT. KT is so powerful a substance that it

will leach from whatever it is in. Maybe not at first but eventually..
