Guest guest Posted August 21, 2009 Report Share Posted August 21, 2009 Freeze them, you don't want to use oil after you've rehydrated them, so freeze them I've done it and they came out fine.. Anyway they'll store for a few days if they're well wrapped or packed in the fridge just like using fresh ones... And there's no law that says you HAVE to rehydrate them.. It depends what you're using them for really.. Just as there's no law that says you HAVE to store them in oil. It's all a matter of personal preference... Example: If you want to use them in a pasta sauce cooked or uncooked you can simply chop them up fine without rehydrating.. You can use them in salad dressings chopped fine too, if they're a bit dry and chewy always chop them fine... I've eaten them straight from the packet too.. I'm doing my own dried tomatoes now though.. When there's a glut of them either in your garden or at the stores simply slice them in half and lay them on a baking tray on parchment and have your oven to the lowest setting possible and simply dry them out slowly for hours until they're dry enough for you. Much cheaper than buying them. And after you've dried them Freeze them!!
