Guest guest Posted November 2, 2004 Report Share Posted November 2, 2004 Pam, Sounds like you are doing just fine, the only thing that may cause a problem is your choice of cover, Kombucha needs oxygen and saran wrap is not good, you can use the coffee filter papers or paper towels, or a clean piece of material such as cotton, muslin, linen etc. A cut up T-shirt is also a good choice. In fact, i still have one sealed in the same container it started out in before Hurricane Charlie in mid August and that one started w/o a scoby, just starter in fresh tea. that scoby developed just fine. I've done this repeatedly. From my own experiences, it doesn't make any difference if the container is open or sealed, as long as there is some airspace at the top to begin with.
