Lost my fizz Hi everyone, I've been reading all the comings and goings for months now and have learned so much about KT -- Thank you all!! My concern is that I've been using the same starter culture for about 4 or 5 months now, and even though it looks great, I'm noticing that my tea doesn't fizz and create that nice, thick " beer head " that it used to when it was done brewing. I always add some fresh ginger and give it a stir before putting it in the fridge, but the last couple of times...very little action. Any ideas as to why this may be? -- and does it suggest a problem (weak or dying culture?). Perhaps I'm just letting it brew too long (about 14 days)? " She's " had a half dozen babies so far, but I've either given them away or frozen them all. I just recently took one of the frozen babies out and added it to a new batch of tea (now that my husband and I are both drinking KT I need to make more!). This batch is two days old, and the baby has sunk to the bottom of the jar today. I hope that it will rise again, but I've never used a frozen culture. I got the idea from someone on the list. I did freeze a cup or more of starter with the baby. I have a feeling from your question that perhaps cultures don't live this long without being replaced by their offspring? But my scoby looks so beautiful it's hard to imagine that she is past her prime! Am I wrong?? Guest guest Posted October 20, 2004 Report Share Posted October 20, 2004 Diane, If she is still not real dark in color and is still firm to the touch, then I would say she still is good, Just that they do get tired out, eventually. Your loss of fizz might suggest an imbalance of the bacteria and yeast. I believe Margret mentioned this. When you start your next few brews,try to make a point of using the KT at the bottom where all the ooglies are, that may help increase the yeasty beasties and add fizz. As for frozen cultures, they can be very sluggish and may take a few brews to get back in the swing of things. But they do come back. Luv, Sprite " When you drink the water, remember the spring.
