I know there has been a lot of talk about not needing a scoby when

brewing kombucha. I thought you would be interested in this quickie I

found in the Kombucha FAQ's.

6.36 Can one produce Kombucha Tea without using a colony?

Roussin, Director of the Kombucha Consumer Research Group

& trade; says " . . . the colony brings to the ferment everything it needs

to reproduce itself. And fermenting without a colony will breed out some

of the symbiotes, and it will also breed in new ones. " " . . .I strongly

recommend that you introduce a colony to each new ferment you start. It

has all of the information necessary to replicate itself, and while some

of that information is not necessary, much of it is. The colony is not

an effect, it's a purpose. "

With several recent 'scoby-not-necessary' messages I KNEW that

somewhere someone had made a important pro-scoby statement.

Thanks for digging it out for us, great digger up of vital information!
