Guest guest Posted October 9, 2004 Report Share Posted October 9, 2004 Hi EveryOne, Since I have always bottled in glass and I used to sell my Kombucha Manna Tea in the local health food stores, I have seen my share of bottles breaking! Remember what used to happen to coke bottles when you shook them when they were warm? Anyway, just a few bottles have broken, not many. One did break tightly capped in the fridge. One in the car on the way to a store delivery. One of my customers bought a bottle of Kombucha from the fridge in a health food store, took it home and stored it at room temperature - next to a wood burning stove. Fortunately everyone was asleep when it broke. It is best to use _tapered_ corks if you want the cork to come out rather than having the bottle explode. Straight corks don't necessarily pop out under pressure, instead the bottle will break. Kombucha ages so well it would be a shame not to have some tucked away in the fridge for a year or more to celebrate special occasions. Aged Kombucha tastes a lot like Champagne and I have noticed there are some similarities in the process of making both. The first bottles of Champagne broke too! That is why they have those special bottles with the indented bottom and thick glass as well as wired corks to keep the pressure in and the bottle from breaking.
