A mushroom is really a fungus. When any thing else is called a mushroom,

it is really the shape, not the biology or mycology. A cloud. Also a

verb, a story can mushroom when told with too much excitement. So what

if a SCOBY is called a mushroom? Just wondering..Virginia D.

Actually, I can understand how it would be possible that originally,

someone started to call kombucha a mushroom. Just for lack of a better

way to tell someone else about it.

Let's face it how many of us would be interested in it if it were first

presented as a gelatinous blob of cellulose, consisting of bacteria and

yeast. And then be told we were to drink it's waste products?

Much easier and more appetizing to say a mushroom which you ferment and

make an elixir health that you drink.

But today in our " enlightened " state, we now call it " the culture " , " the

colony " , " the kombucha mother or baby " , or " the SCOBY " .:)

Hi WSprite and all,

I mistakenly added the sugar to the water before steeping the tea. Should I

start over? I appreciate any thoughts, as I don't want to waste 8 days waiting

for my tea when there are experts who can coach an over-enthusiastic rookie!

Gives those not in the know the wrong idea. A SCOBY works fine for me, takes

a little explanation, but captures kombucha's uniqueness much better.
