A cloud. Also a verb, a story can mushroom when told with too much excitement. So what if a SCOBY is called a mushroom? Just wondering..Virginia D. Just for lack of a better way to tell someone else about it. Let's face it how many of us would be interested in it if it were first presented as a gelatinous blob of cellulose, consisting of bacteria and yeast. And then be told we were to drink it's waste products? Much easier and more appetizing to say a mushroom which you ferment and make an elixir health that you drink. But today in our " enlightened " state, we now call it " the culture " , " the colony " , " the kombucha mother or baby " , or " the SCOBY " .
