We couldn't make it this year, but it turned out to be a blessing in disguise for it was perfect hog butchering weather. We were able to process the first hog of the season on our farm and make a traditional Hungarian sausage (blood sausage) with 4 generations of family members present...and it is absolutely delicious! Thanks for posting this info, Will! It looks great! Just a word of caution on the B12 injectable - some forms of it contain preservatives. I have found it difficult, but not impossible to purchase preservative-free.
