Newbie, Breads Question

Hi, I'm new to this, just reading Nourishing Traditions now. I'm not

finding much on bread in there (just started reading it, but there are

really very few bread recipes) so I thought I'd just ask for instant

gratification. :)

What is the general feeling on breads? I make my own using mostly

whole wheat flour. There are obviously no preservatives, the bread

tends to go bad within a week. And I use natural sweeteners. Are

there reasons to stay away from them by NT standards?
