(Burnsville) I pulled them and they had roots almost like carrots, at least 8 " . I never had them before so I Pre-boiled and sautéed them with Carrots, Ginger and Chili Oil. No onion. Not bad, not too bitter. Dandelions are supposed to be one of the most nutritious herbs. Everything can be eaten and it has no weird or poisonous look-a-likes. This summer I plan on foraging a lot and trying new, well identified wild edibles. Burdock is also good, sliced and fried. I am waiting for them to appear. You have to get them early while the roots are full of stored carbs and sugar. After the flowers they get bitter. Also Cattails, All summer long something is good eating.
