Great article, Will! Thanks for sharing it. Today I was able to

educate one of my clients, a single mom with 2 difficult kids (3 and

1), about butter. She confessed to liking butter a lot better than

the " I Can't Believe It's Plastic " spread that I observed her using at

breakfast. She even knew about how kids need " good fats " altho she

was not sure what those were. I explained the rancidity of vegetable

oils in the spreads, the chemical maskers, etc., and asked her that if

she did nothing else I suggested, at least go back to butter.

Next I'll tackle the skim milk...

lunch co-ordinator in Alaska. Still pushing for reform.
