I tried to make some last week, didn't watch the peas while they were simmering and completely charred them. I had to toss them all and scramble for something else for dinner that night. I do mine at 300 (well 275 actually because my oven runs hot) in a glass dish covered in aluminum foil since this chicken is 8lbs and too big for my Le Creuset roasting pot. When they're smaller though, I put them in that pot and they are wonderful! I put coconut oil on the whole thing and sea salt. Sometimes do other herbs too. I find that it's easiest to make a paste with the CO and the spices and rub it onto the chicken by hand since if it's liquid it solidifies quickly and then it's a big mess. I'll probably take the foil off for the last little bit of the roasting to brow it up. I'm doing this one for about 6 hours since it's so big. The smaller ones I do for 2-3 hours. Soup turned out great but I do not have a recipe! I am one of those dump and cook type of cooks. It is rare that I measure anything! I used green and yellow split peas, lots of onion, celery and carrots. Simmered this all with a Qt of beef broth and a bunch of water. Later I added salt, pepper, garlic powder, bay leafs, a few diced spuds and simmered some more. Lastly I added some pork crackling's and fried bacon with some of the grease and poured the whole mess into the crock pot to simmer all afternoon. I added a bit of thyme an hour or so before serving. Made enough for me to have two bowls and 3 qts left to can. I am the only one who likes pea soup and so I can it and am able to have it when ever I want. I have never made split pea, though. For baking, though, I try to measure. How do you can your soup... pressure cooker, or water bath? Guest guest Posted April 26, 2006 Report Share Posted April 26, 2006 AM, I always pressure can my soups and that sort of thing. They are low acid foods and best if pressured canned. I know some people will do hot water baths for hours and hours but I personally prefer to be more safe than sorry. I am excited as a friend is blessing me with a second pressure canner! I will be able to get twice as much done now!!! This will be fantastic when the beans come in! I have been known to put up 2 bushels (or more) in one day! YIKES! I pick in the morning, rinse them outside with the hose and then spend hours snapping them! I do this outside in the shade. The hens who may be loose love this and steel beans from me. By then it is late afternoon and I have 3 to 4 canners worth (or more) of beans to process. This will cut down my time a lot! I am looking forward to all the people who will be coming for canning this summer. So if any one else is interested in learning to can or working together to get our canning done, let me know. I have a pressure cooker, but it doesn't have the right kind of gauge to can with.
