I have a great recipe I use all the time called Chicken in Milk. It's

a recipe from Oliver, a chef from the UK whose books are great

lots of yummy recipes using lots of fresh whole ingredients. It

sounds a little strange but tastes fabulous.

Chicken in Milk

1 (3 lb) organic chicken

Salt and freshly ground pepper

1 stick of butter

1/2 cinnamon stick

1 good handful of fresh sage

2 lemons

6 cloves of garlic, skin left on

2 cups milk

Preheat oven to 375 degrees F. Use a pot about the same size as the

chicken. (I use a dutch oven.) Season chicken generously with salt and

pepper, and fry it in the butter, turning regularly until it is golden

all over. Remove from heat. Discard the butter but leave the sticky

goodness in the bottom of the pan. Zest the lemons using a vegtable

peeler. Place sage, cinnamon stick and 1 zested lemon into the cavity

fo the chicken. Place chicken back in the pot. Add milk, lemon zest,

garlic. Roast in oven uncovered for about an hour and a half(or until

done). Baste if you remember.(I never do.) The lemon zest will split

the milk making a fantastic lemony, garlic sauce that has cheese like

curds in it. I serve it with polenta that has loads of parmesean,

butter, and the roasted garlic cloves from the chicken and a salad or

mashed potatoes that I've added the garlic cloves to.
