We have a Zyliss mandolin-style shredder that has several sizes and

widths of cutting blades. It shreds and/or slices vegetables very

quickly and easily for just about any purpose. I'm always

experimenting with kraut ingredients-- carrots, onion, bits of citrus

pulp or apple, tiny cocktail onions, whole garlic wedges, etc. The

blades are very sharp, but it's safe as long as you use the safety

attachment for holding whatever you're shredding to protect your fingers.

I've noticed that using a food processor works OK if you like very

finely chopped cabbage, but you have to babysit it all the time

because cabbage doesn't process very easily. I would always poke at

the cabbage to get the blades to catch it enough that it could process

on its own-- no such luck! Maybe I did it wrong, but I gave up on it

and have been using the shredder ever since.

I do cole slaw with my salad shooter -- you can purchase the large size model at

Fleet Farm. It comes out in sliced and then I run it through again for the cole

slaw.

We just got one from an estate auction this last summer. That's about the only

places you can find the good/old ones anymore. Sometimes they have them at

antique/consignment shops too.
